Flavours & Fillings

We offer a range of cake flavours and types, as well as fillings and toppings.

Fruit Cakes

Traditional fruit cake; rich, fruity and dark. Contains raisins, currants, sultanas, cherries.

Light fruit cake; rich, fruity but lighter in colour. Contains golden raisins, sultanas, apricots.

Tropical fruit cake; rich luxurious fruity cake. Contains melon, golden raisins, sultanas, apricots, papaya, peach, pineapple. This cake is a premium cake and the ingredients are slightly more expensive, between £10-20 additional cost per tier.

If you would like to add any other specific ingredients please discuss this at your free consultation. Wedding cakes can be made using a different cake mix for each tier if required, the choice is yours!

Alcohol

Alcohol (Brandy, Sherry or Rum) is added to the fruit cakes, fruit is soaked in alcohol before being added to the cake mix and once baked and cooled the cake is periodically ‘fed’ with small amounts of alcohol. This enhances the rich fruity flavour, and more importantly acts as a natural preservative.

Please state if you prefer not to have alcohol added.

Nuts

All our cakes are made without nuts however we cannot guarantee that our cakes are wholly nut-free, as other ingredients may contain traces of nut.

If you prefer to have a cake with nuts included in the mix, we are happy to use them and offer a choice of; coconut, almonds, hazelnuts or walnuts.

Finishing

Fruit cakes are finished as standard with a covering of marzipan and fondant icing. Alternatively a double covering of fondant can be used for those who do not like marzipan, however the finish is not always as smooth as that of the marzipan cake.

Madeira Sponge cake

Celebration cakes are made with a Madeira cake recipe this has a fine close texture ideal for sculpting and supporting fondant icing with elaborate decoration.

  • Butter Madeira – traditional Madeira sponge with a hint of vanilla.
  • Lemon Madeira – freshly squeezed lemon juice and finely grated lemon zest.
  • Orange Madeira – freshly squeezed orange juice and finely grated orange zest.
  • Chocolate Madeira – 70% cocoa chocolate and cocoa powder.
  • Coffee Madeira – 100% Costa Rican Arabica coffee.
  • Mocha Madeira – combining the flavours of chocolate and coffee.

Fillings

Madeira sponge cakes can be filled with;

  • Vanilla buttercream/strawberry jam or jam of your choice.
  • Flavoured buttercream (lemon, orange, strawberry, blackcurrant, coffee or peanut butter)
  • Lemon curd
  • Marmalade
  • Chocolate fudge

Finishing

Madeira sponge cakes are finished with a thin coating of buttercream and a thin covering of fondant icing (coloured to your choice of design or chocolate fondant icing). Further decoration or sculptural work is handmade from marzipan or fondant icing.

Cupcakes

Sponge cupcakes can be flavoured with;

  • Vanilla
  • Lemon – fresh lemon juice and grated zest
  • Orange – fresh orange juice and grated zest
  • Chocolate – 70% cocoa chocolate and cocoa powder
  • Coffee – 100% Costa Rican Arabica coffee
  • Mocha – combining the flavour of chocolate and coffee
  • Red Velvet – Luxurious red chocolate sponge (using natural colours)

We also produce dramatic ‘Rainbow cakes’ – multi coloured cupcake sponge (using approved food colours)

Cupcakes are finished with swirl/piped frosting and decorated to your design with handmade fondant/marzipan decorations or chocolates, mini-cookies, sweets… the choice is yours.

Alternatively cupcakes can be covered with smooth fondant icing and decorated to your design. This is the preferred covering for the more elaborate decorations.
