Flavours & Fillings
We offer several varieties of cakes with different options for flavourings and fillings. If there is a specific combination you would like that we don’t seem to offer here, let us know what you want and we will make it for you.
Fruit Cakes
- Traditional Fruit – the quintessential cake, perfect for any event and traditionally served at Christmas time and weddings, containing raisins, sultanas, currants, cherries.
- Tropical Fruit – a full and fruity cake containing melon, cherry, raisin, papaya, pineapple, apricot, and peach.
- Light Fruit – a less fruit-heavy cake usually made with apricots, sultanas, golden raisins, and cherries.
Alcohol
All our cakes are made without alcohol unless requested. Alcohol is traditionally used to enhance the flavour and richness of the cake by a combination of pre-soaking fruit in the alcohol of choice, then ‘feeding’ the baked cake with the same alcohol to allow the cake to mature with full flavour. We offer a choice of Brandy, Cognac, Sherry, or Rum for all our fruit cakes.
Nuts
All our cakes do not contain nuts, however we cannot guarantee that our cakes are wholly nut free, as ingredients may contain traces of nut. However, if you prefer to have a cake with nuts, we are happy to use them. We offer a choice of coconut, almonds, hazelnuts, and walnuts.
Finishing
Our fruit cakes are finished in natural marzipan and fondant icing.
Sponge Cakes
We use a butter Madeira recipe as the fine, close, texture of the baked cake is ideal for both sculpting and supporting fondant icing and elaborate decoration.
- Plain Butter Madeira – traditional, with a hint of vanilla
- Lemon Madeira – with freshly squeezed lemon juice and finely grated lemon zest
- Orange Madeira – with freshly squeezed orange juice and finely grated orange zest
- Chocolate – with cocoa powder and melted chocolate
- Coffee – from subtle latte to strong espresso
- Mocha – the combined flavours of chocolate and coffee
Fillings
These cakes can be filled with plain vanilla buttercream and jam of your choice, or with a flavoured buttercream. We are also able to offer a choice of lemon curd, marmalade, and chocolate fudge frosting. We will also do our best to supply your choice of alternative filling, if necessary.
Finishing
Sponge cakes are finished with a thin coating of buttercream and a thin layer of fondant icing (coloured to design) or chocolate fondant icing (white, milk, or dark). Any further decoration or sculptural work is usually made from marzipan, fondant icing, or modelling chocolate, as required. We aim to make all decoration edible.
